Gyudon is a classic Japanese comfort food made with thinly sliced beef and onions simmered in a sweet-savory broth and served over a warm bowl of rice. Often considered a Japanese-style fast food, it’s an affordable, satisfying and nutritious meal loved by generations in Japan.
Ingredients (2 servings):
- 8 oz very thinly sliced, well-marbled beef - beef belly, ribeye or chuck works well
- ½ large onion, sliced
- ¾ cup water
- 1 tsp WHERE THE WILD THINGS EAT Original or Vegan Dashi powder
- 2 tbsp soy sauce
- 1 tbsp mirin
- 1 tbsp sake (rice cooking wine)
- 1-2 tsp sugar
- 2 bowls cooked rice
- Topping options - Sliced green onions, beni shoga (Japanese pickled red ginger), shichimi togarashi (Japanese seven-spice blend) and egg.
Instructions
- Add water, onion, ginger, dashi powder, soy sauce, mirin, sake and sugar to a pan and bring to a simmer until softened.
- Add beef and cook for another 15-20 minutes until cooked through and the flavors come together.
- Spoon the beef, onions, and a little broth over hot rice.
- Top with green onion and beni shoga for garnish. Enjoy!
