Ingredients (2–3 servings):
- 1/2 onion, diced
- 1/2 red bell pepper, diced
- 1 small zucchini, diced
- 2 garlic cloves, minced
- 1 can (15 oz) corn, drained or kernels from 2 ears of corn
- 1–2 sausages, sliced or diced
- 1 tbsp unsalted butter
- 1 tbsp oil
- 1 tbsp WHERE THE WILD THINGS EAT Curry Ember
- Salt and black pepper to taste
- Chopped parsley for garnish
Instructions
- Heat oil in a skillet over medium-high heat. Add the sausage and cook until lightly browned. Transfer to a plate.
- Add the garlic, onion, zucchini and bell pepper to the skillet and sauté until softened.
- Stir in the corn and Curry Ember. Cook for 3–4 minutes stirring occasionally until the corn is heated through and lightly caramelized.
- Return the sausage to the skillet and toss to combine. Season with salt and pepper to taste.
- Remove from heat and stir in the butter until melted. Garnish with chopped parsley and enjoy!
