A classic Japanese comfort food made with miso and our rich dashi. Easy to make and packed with umami, this comforting soup is perfect for everyday meals.
Vegan option: Substitute Original Dashi with Vegan Dashi
Ingredients
Dashi stock
- WHERE THE WILD THINGS EAT Original or Vegan Dashi
- 400-500ml water
Soup
- 1/2 onion, thinly sliced
- 1/2 cup carrot, sliced
- 1/2 cup mushrooms like shiitake and shimeji mushrooms
- 1tbsp dried wakame seaweed
- 1/2 cup tofu cubes
- Chopped green onions for garnish
- 1-2 tbsp miso
Instructions
- Prepare the stock. If you use:
- Dashi packet: Place 1 packet in 400-500ml of water. Bring to a gentle boil then lower the heat and simmer for 4-6 minutes. Remove the pack.
- Loose powder: Add about 2 tsp to the water (adjust to taste).
* Because our products are made with whole, natural ingredients, some particles may not fully dissolve. If you prefer smoother texture, please remove any remaining bits. - Add the onion and mushrooms and cook for about 2-3 minutes until softened.
- Add the tofu and wakame and cook for 1 minute.
- Turn off the heat and dissolve miso in the broth using a spoon or whisk. Garnish with the green onions and enjoy!
