Ingredients (2–3 servings):
- 1 lb mushrooms (cremini, portobello, shiitake or mixed mushrooms), sliced
- 1 tbsp olive oil
- 1 tbsp unsalted butter (optional for extra richness)
- 2 garlic cloves, minced
- 1 tbsp WHERE THE WILD THINGS EAT Tomaterra (adjust to taste)
- Salt and black pepper to taste
- Chopped parsley or thyme leaves
- Squeeze of lemon (optional)
Instructions
- Heat olive oil in a skillet over medium-high heat. Add butter if using.
- Add the mushrooms and sauté for 8-10 minutes, stirring occasionally until browned and tender.
- Stir in garlic and cook until fragrant. Add Tomaterra, salt and black pepper and cook for another 1–2 minutes.
- Remove from heat and finish with parsley or thyme and a squeeze of lemon.
Great on: Toast, steak, burgers, eggs, grain bowls or as a simple side dish.
