Ingredients (2–3 servings):
- 1 ball frozen pizza dough, about 12–16 oz, thawed according to package directions
- ⅓ cup basil pesto
- 8 oz mushrooms, sliced—cremini, shiitake or a mix
- 2 cloves garlic, minced
- 1–2 tsp Tomaterra
- 1 tbsp olive oil, plus a little for brushing
- Shredded mozzarella cheese
Optional toppings: prosciutto and arugula
Instructions
- Heat to 450°F or the temperature recommended on your dough package.
- Heat the olive oil in a skillet over medium-high heat. Add the mushrooms and cook for about 5 minutes, stirring occasionally, until lightly browned. Stir in the garlic and Tomaterra, cook for another 30–60 seconds then remove from the heat.
- Stretch the thawed dough into a roughly 12-inch round on a lightly oiled pizza pan and spread the pesto over the dough.
- Sprinkle with mozzarella and distribute the mushrooms evenly on top. Lightly brush the exposed crust with olive oil.
- Bake for 12–16 minutes or according to your dough’s instructions until the crust is golden. Add the additional toppings and enjoy!
